Saute oil, cumin seeds, and onion (until softened) in your instant pot.
Add ginger and garlic, and cook for another minute.
Add in chopped tomato, salt and spices, and cook for another 2 minutes
Add dal, water and pressure cook.
Heat ghee and red chili powder over medium-high heat. Turn off heat and add to dal before serving.
Finish Moong dal with chopped cilantro and a squeeze of lemon juice.
Serve with cumin rice or homemade roti for a comforting Indian meal.
