Air Fryer Aloo Gobi (Indian Cauliflower and Potatoes)
This Air Fryer Aloo Gobi is classic Indian dish made up cauliflower and potatoes cooked with tomato, onion, and the perfect blend of seasonings. It's vegan, gluten-free, and ready in under 30 minutes!
Cut cauliflower head into even size florets. You can follow these easy steps on how to cut a cauliflower. Similarly, cube or slice potato into even bite size pieces. Rinse and pat dry. It's ok to leave a little moisture in as that helps the veggies cook without drying.
Add cauliflower florets and potato cubes in a large mixing bowl. Add oil, ginger and garlic paste, chopped tomatoes and sliced onions.
Add salt, turmeric, red chili, coriander, cumin and garam masala. Using two spatulas mix everything well until the cauliflower florets and potato cubes get evenly coated.
Spread this mix into the fryer basket in a single layer. Depending on the size of your basket, you may have to air fry in multiple batches.
Air fry at 380°F for 10 minutes, shaking the basket after 8 minutes. Pull it out, toss the aloo gobi well. Check and adjust seasoning and insert it back to air fry again for another 2-3 minutes, until the cauliflower and potatoes are tender on the inside and crisp from the outside.
Remove the cooked aloo gobi in a serving bowl and garnish with chopped cilantro. Serve warm as a side dish.
Alternate Method: Oven Roasted Aloo Gobi
Preheat the oven to 425°F. Follow steps 1-3 above. Spread the seasoned veggies on to a lined baking sheet. Cook for 20-25 minutes, until the cauliflower and potatoes are cooked through and crisp on the edges.

Cauliflower: To ensure even cooking, cut the florets in a similar size. You can follow these easy steps on how to cut a cauliflower.
Potato: Gold or red potatoes both work great for air frying. If using baby potatoes instead, simply cut them in half.
Tomato: Fresh chopped tomatoes can be replaced with canned diced tomatoes, without the juice.
Rinsing & drying: When drying veggies after rinsing, pat dry. It's ok to leave a little moisture in as that helps them cook through without drying.
Make it Mild: To make this Aloo Gobi mild, skip the serrano chili and red chili powder.
Don't overcrowd: Spread the veggies in a single layer in the fryer basket to ensure even cooking. If you stack the veggies, they won't become crisp.
Air frying time: As air frying temperatures vary a bit across different models, keep an eye on the cauliflower after the 12 minute mark. Adjust the time as needed.
