Enjoy tender and crisp Air Fryer Zucchini Fries as a gluten-free, low-calorie, low-carb, and keto appetizer, snack, or side dish, ready in just 20 minutes.
Wash and dry zucchini. Cut each zucchini in half, lengthwise. Now cut each half into ½-inch thick sticks (fries).
In a shallow bowl, combine the almond flour, grated parmesan, and seasonings.
In another shallow bowl, beat the egg. Now arrange the bowls in the following order for a convenient process: zucchini fries, beaten egg, and breadcrumbs.
Dredge each zucchini stick in the egg, then in the almond flour mix. Place them on a lined baking sheet. Now generously spray the zucchini fries with cooking spray.
Place the zucchini fries in the fryer basket, in a single layer. Cook the fries at 400°F for 6-8 minutes, or until lightly golden and crispy. Depending on the size of your fryer, you may have to make these in 2-3 batches.
Set up the breading station: Placing the bowls and baking sheet in order ensures easy and quick preparation. Set it up from left to right as zucchini sticks, beaten egg, almond flour mix, parchment-lined baking sheet.
Customize the seasoning: Using the seasoning suggestions from above, you can dress them up to compliment your meal.
Breading: I use almond flour (or almond meal) to keep this recipe gluten-free and low carb, but feel free to replace that with regular breadcrumbs or panko if you like.
Don't crowd the air fryer: Place as many zucchini fries as you can in the air fryer basket without overlapping. Air fry in 2-3 batches, if necessary.
Best results: These zucchini fries taste the best when freshly air-fried. You can prepare the breading mix ahead of time, but cook them just before serving.
Air Frying tip: Since air fryer temperatures vary, keep an aye after 6 minutes to prevent over-browning.
