Instructions
Peel and chop mango into chunks. Add the Greek yogurt, mango chunks (or pulp), cardamom, maple syrup, and cold water to a blender jar. Blend until smooth.
Stir in the rolled oats, chia seeds, and saffron strands (if using). Mix well and wait 5 minutes.
After 5 minutes, stir thoroughly to ensure the chia seeds are evenly distributed and don't stick to the bottom or clump together. Cover tightly and refrigerate overnight for best results.
Stir the oats in the morning. If they are thicker than you like, add 1-2 tablespoons of cold water or milk. Top with chopped mango and pistachios, and enjoy.

Adjust consistency: The consistency will vary depending on the thickness of your Greek yogurt and mango puree. Add liquid as needed to loosen it.
Start without additional liquid. It is easier to loosen the oats in the morning than to fix oats that are too runny.
For a slightly softer texture, add 2 tablespoons water or milk before refrigerating.
Taste the mango-lassi mixture before adding the oats. Some mangoes need no additional sweetener.
