Add potatoes, water and salt into the Instant Pot. Close the lid and pressure cook for 5 minutes at high pressure.
Cut the potatoes in half, or quarter them based on their size. Add olive oil and seasoning, and toss well.
Add parmesan cheese and toss again to coat potatoes in cheese.
Turn on Saute. Place the seasoned potatoes in the pot face side down. Cook until they turn golden brown.
Transfer to a serving platter. Brush with melted butter and garnish with chopped chives. Enjoy!
