Parmesan Roasted Potatoes – Instant Pot & Oven

Crispy on the outside, light and creamy on the inside, flavored with herbs and parmesan cheese, and roasted to perfection.  These Parmesan Roasted Potatoes are the perfect side-dish for any occasion, whether its Thanksgiving, Christmas, or any holiday dinner.

I’ve been making variations of Crispy Roasted Potatoes for years now, but this flavor combination is my absolute favorite.  Herbs like basil and oregano add such a nice earthy flavor to the potatoes.  And I toss these potatoes with some freshly grated Parmesan cheese, which gives this dish an un-matchable combination of nuttiness and richness.

I steam the potatoes in my Instant Pot pressure cooker, and then roast them in the oven, till they are crisp and golden on the outside.  Since the baked potatoes get coated with all flavors equally, each bite is the perfect harmony of flavors.  And that parmesan crust,  you have got to taste it to believe how insanely delicious that is!

Easy Recipe for Parmesan Roasted Potatoes

I love recipes which require minimum prep and babysitting.  Potatoes happen to be my favorite  root vegetable, I simply adore them.  I can have them in any shape or form.  Since I’m watching my carbs these days, I don’t get to enjoy them as much as I would like, but when I do, I go all out 🙂

This recipe is one of my Go-Tos.  It takes under 10 minutes of prep, and most of the cooking is hands-off, which is always a win-win for me.  For this recipe, I use baby gold potatoes, which are about 1.5 inches in size.  You can use baby red potatoes too.  Here’s how I put this dish together:

Step#1 Boil or Steam the Potatoes in the Instant Pot or Stove

How to boil potatoes in an Instant Pot:  Wash and dry potatoes and add them to the pot.  Add water, close the lid and pressure cook them for 5 minutes using the ‘Steam’ or ‘Pressure Cook’ mode.  Manually release pressure (QR), by turning the vent to ‘Venting’ position in the DUO, and pressing down the pressure release button in the ULTRA.  Remove the potatoes and discard the water.

Stove-Top method:  Wash and dry potatoes, add them to the sauce pan.  Add water, salt and cover with a lid.  Let is cook for about 10-12 minutes, or until the potatoes are fork tender.

Step#2  Cut potatoes in half and season with herbs & cheese

Cut the potatoes in half, or quarter them based on their size.  Add olive oil and seasoning and toss well.  Now add the parmesan cheese and toss.  By adding the cheese later, we ensure that the potatoes get seasoned evenly before the cheese sticks to them.

Step#3 Roast in the oven, or crisp on Saute mode in Instant Pot

Instant Pot Method: Turn on Saute on medium heat.  When it displays hot, add the seasoned potatoes, face side down.  Try not to overlap them as we want a crisp exterior on all of them.  Cook the potatoes, till the cheese has formed a nice golden crust on each of them. This may take around 5-8 minutes.  You may have to monitor the potatoes as the cheese can burn really fast.

Oven Roasted Potatoes: Pre-heat the oven at 400 °F.  Line a baking sheet with parchment paper or aluminum foil.  Place the potatoes face side down.  Try not to overlap them as we want a crisp exterior on all of them.  Place the baking sheet on the lower most rack of the oven and bake for about 20-25 minutes, or till the cheese has formed a nice golden crust.

Step#4 (Optional) Melt some butter and lightly brush the potatoes

This step is totally optional, but one that takes this dish to the Roasted Potatoes Hall of Fame! It only takes a tablespoon of butter to melt and brush on all these baked potatoes, but that little butter adds an amazing rich finale to this recipe. If you have the time, I highly recommend this step.

How to Make One-Pot Roasted Potatoes

If you’re making these Parmesan Roasted Potatoes during holiday time, oven space can get tight.  But no worries, if you have an Instant Pot, or any electric pressure cooker with a ‘Saute’ feature, you can make this dish ENTIRELY in that.  It may require some babysitting towards the end, but not a whole lot.

Steps for One-Pot Instant Pot Roasted Potatoes:

✦ Wash and dry potatoes and add them to the pot.  Add water, close the lid and pressure cook them for 5 minutes using the ‘Steam’ or ‘Pressure Cook’ mode.

✦ Manually release pressure (QR), by turning the vent to ‘Venting’ position in the DUO, and pressing down the pressure release button in the ULTRA.  Remove the potatoes and discard the water.  Cut the potatoes in half.

✦ Turn on the Instant Pot on Saute mode, at normal/medium temperature.  When the display reads ‘hot’, I add the olive oil, potatoes, salt, herbs and grated parmesan cheese.  Toss the potatoes well till each potato gets coated.  Place the potatoes cut-side down.  This helps form that delicious parmesan crust on them.  That should take a few minutes, anywhere from 5-8 minutes.  I wouldn’t walk away at this point as the cheese can burn.

✦ As soon as the potatoes form the golden crust, turn off the Instant Pot and remove the potatoes to prevent the crust from burning.  Garnish with melted butter and chopped chives.

Oven Baked Roasted Potatoes Recipe

If you want to make this recipe entirely in the oven, without pre-cooking the potatoes, here’s how you can do it:

✦ Wash and dry the baby potatoes.  Cut them in half.  Toss them with olive oil and salt.  Spread them out on a lined baking sheet and cook them in a pre-heated oven at 400°F for about 15 minutes.  The potatoes should be about 80% done by then.  Check them with a fork, else toss them back in for another 5 minutes

✦ Remove them from the oven and toss them with seasoning, herbs and grated parmesan cheese.  Spread them out evenly, placing them cut-side down. Place the baking sheet back in the oven, at the bottom rack, for another 15-20 minutes, or until they form a golden crisp crust.

Crisp Roasted Potatoes: Oven Roasted vs. Instant Pot Comparison

Here is a comparison between the two based on texture, time, quantity and baby-sitting:

  • Texture: The oven-baked ones are crisper on the outside than the Instant Pot Roasted Potatoes.
  • Time: If using pre-cooked potatoes, the Instant Pot recipe is faster.  If using raw potatoes, the total time remains about the same, around 35 minutes.
  • Quantity: If I am making 1-1.5 lbs. of potatoes, enough to feed 6 people or so, I make them in whichever gadget is available.  BUT, if I am making this for 20 people, I always steam them in my Instant Pot, and then roast them in the oven.  This way I get a nice and even crust on all potatoes, which I would miss in the Instant pot since I would have to stack them.
  • Minimum Baby-Sitting: To me the combination of steaming the potatoes in the Instant Pot followed by roasting in the oven seems to be the most hand-off way.

How to Make Roasted Potatoes with Different Potatoes

This recipe is pretty versatile and you can use it with any kind of potatoes or any other vegetable too.  Here are some variations that I make:

  • Parmesan Potato Wedges:  I use russet potatoes for this,  and cut each potato into 6 or 8 wedges, depending on their size, and follow the same recipe.  I follow the ‘Oven’ recipe for this.  In about the same amount of time, you can enjoy delicious parmesan russet potatoes.
  • Parmesan Roasted Red Potatoes: Follow the same recipe, just increase the steam cooking time to 5 minutes.  Rest everything is the same.
  • Garlic Herb Roasted Potatoes: Add finely chopped garlic or garlic powder to this recipe along with rosemary, oregano and basil.  Follow the same time and instructions.
  • Different Size of Potatoes: In this recipe, I have used baby gold potatoes, about 1.5 inches.  Same timing will work for baby red potatoes.  If using regular size gold or red potatoes, increase steam cooking time to 8 mins followed by QR.

Ingredients

Steam/Boil Potatoes

  • 1.5 lbs baby gold potatoes
  • 3/4 cup water
  • 1/2 tsp salt

Garnish

  • 1 tbsp butter melted or olive oil
  • 2 tbsp chives chopped
