Easy 15-minute recipe for Mango Yogurt Parfait, a delicious layered treat made with mango-flavored yogurt, crunchy granola, sweet mango chunks, saffron, and cardamom.
Soak saffron: Warm a tablespoon of milk in a small bowl and add the saffron strands. Soak for about 10 minutes to release aroma and color.
Prep the mangoes: Peel and dice the mangoes into small cubes. Reserve some for the parfait, add the remaining to a blender jar, and blend into a smooth puree.
Prepare mango yogurt: In a bowl, mix the Greek yogurt with mango puree, powdered sugar, cardamom powder, and saffron milk. Check for taste and adjust the sweetness to your taste.
Layer the Parfait: In a serving glass or bowl, layer ¼ cup of mango yogurt. Now spread 2 tablespoons of granola on top. Sprinkle slivered or chopped pistachios on that followed by a few mango chunks.
Repeat Layers and serve: Repeat the layering process until the glass is full, finishing with a layer of mango cubes. Assemble the other parfaits in the same way. Serve immediately and enjoy!

Mango: Freshly pureed mangoes work best in this recipe, but if those are unavailable, you can use store-bought unsweetened mango pulp or frozen mango chunks. Skip the sugar if using sweetened mango pulp.
Granola: Use your preferred brand of granola. For an extra boost of protein, use this homemade high-protein granola recipe.
To Layer or not: I use ½ cup of yogurt and ¼ cup of granola per serving divided into 2 layers. If you like, you can skip the layering and add the yogurt in a bowl in one go, top it with granola, and enjoy.
Sweetness level: This recipe results in moderately sweet mango yogurt. Add another 1-2 tablespoons to make it sweeter.
Fresh yogurt: Use yogurt from a freshly opened container for the best flavor.
