Here's what you need to make this tropical mango parfait:

- Greek Yogurt: Thick and creamy, Greek yogurt provides a lovely tangy contrast to the sweet mangoes. For a dairy-free version, coconut yogurt is an excellent alternative.
- Mango Puree: Fresh mangoes work best for their natural sweetness and juicy texture. I prefer the Altaufo variety since it's non-fibrous and blends into a smooth puree. If unavailable, frozen mango chunks or store-bought unsweetened mango pulp are a great substitute.
- Granola - Any granola will work here, but nutty or coconut granola pairs particularly well with mango. You can also use high-protein granola for a protein boost.
- Saffron & Cardamom: A few strands of saffron soaked in warm milk add an exotic aroma and beautiful crimson color. I add cardamom powder to enhance the floral flavor and aroma. Both these ingredients can be found at your local Indian store or online.
- Powdered Sugar: This is also labeled as confectioner's sugar. Adjust the quantity to suit your taste preference. You can also substitute with a teaspoon of honey if desired.
- Pistachios: Thinly sliced or finely chopped pistachios add a crunchy texture. I add pistachios since they go well with mango, but feel free to use any nuts you prefer, such as cashews or walnuts.
- Fresh Mango: Any juicy, non-fibrous mango will work for this recipe.

How To Make Mango Yogurt Parfait
Here are the step-by-step instructions and images showing you how to make mango parfait easily:
- Soak saffron: Warm a tablespoon of milk in a small bowl and add the saffron strands. Soak for about 10 minutes to release aroma and color.
- Prep the mangoes: Peel and dice the mangoes into small cubes. Reserve some for the parfait, add the remaining to a blender jar, and blend into a smooth puree.

- Prepare mango yogurt: In a bowl, mix the Greek yogurt with mango puree, powdered sugar, cardamom powder, and saffron milk. Check for taste and adjust the sweetness to your taste.

- Layer the Parfait: In a serving glass or bowl, layer ¼ cup of mango yogurt. Now spread 2 tablespoons of granola on top. Sprinkle slivered or chopped pistachios on that followed by a few mango chunks.


- Repeat Layers: Repeat the layering process.

- Serve: Serve immediately and enjoy!
