The recipe is a simple yet luxurious one that involves baking a whole block of feta cheese with juicy cherry tomatoes, then tossing the mixture with cooked pasta. The feta melts and the tomatoes burst to form a light and creamy cheese sauce.

Pre-crumbled sometimes contains an anti-caking agent which can result in a slight graininess, so check the label on the container. However, if all you have is pre-crumbled, that will work as well.

- Seasonings and Herbs: you will need salt, black pepper, fresh garlic, and fresh basil. If you can't find basil, feel free to use fresh parsley, rosemary or thyme instead.

- Place the tomatoes in an oven-safe casserole dish. Drizzle olive oil, sprinkle on salt and pepper, then toss together until the tomatoes are evenly coated.
- Move the tomatoes to create space in the middle and place the feta in the center. Drizzle additional olive oil on top, then sprinkle with salt and pepper. Toss or flip the cheese until it's coated with the seasoning. Bake for 30-32 minutes, or until the tomatoes burst and the cheese melts.

- 4 cups cherry tomatoes or grape tomatoes (2 pints)
- 8 ounce block feta cheese or crumbles
- ⅓ cup extra virgin olive oil used in two steps
- ¼ teaspoon salt adjust to taste
- ½ teaspoon black pepper
- 3 garlic cloves minced
- 10 ounces rotini pasta or pasta of choice
- ¼ cup packed chopped fresh basil used in two steps
Instructions
- Preheat oven to 400°F. Add the tomatoes in an oven-safe casserole. Reserve 2 tablespoons olive oil for later and pour the rest along with salt and pepper. Toss well to season tomatoes.
- Move the tomatoes to create space in the middle and place the feta block or crumbles. Add the reserved 2 tablespoons of olive oil and a pinch of salt and pepper. Toss or flip cheese until coated with seasoning. Bake for 30-32 minutes, or until the tomatoes burst and the feta cheese melts.
- About half way through the baking time, cook the pasta in the Instant Pot. Add pasta, water and salt to the instant pot and set it to cook for 5 minutes. If using another pasta shape, refer to this time chart to calculate the time. Alternatively, cook pasta on the stove following package directions. After cooking, drain the pasta, reserving ½ cup of the cooking liquid.
- Remove the casserole from the oven. Add minced garlic, 2-3 tablespoons of pasta water and half the chopped basil to the feta to make a light cheese sauce. Mix using a spoon or fork, until well combined .
- Add the cooked pasta to the baking dish. Toss to combine. Add more pasta water only if needed. Garnish with more basil and enjoy.
