I'll be honest though. I might be partial to this air fryer aloo gobi recipe. It has all the same delicious flavors of aloo gobi that's prepared in other ways, but with a slightly crispy finish since it's made in the air fryer!
Plus, it's a hands-off recipe-- once you season the veggies and add them to the air fryer, your job is done. And it is so good!

What is Aloo Gobi?
Aloo gobi is a simple, flavorful, vegan, and gluten-free Indian stir fry made with potatoes and cauliflower cooked with ginger-garlic, spices, onion, and tomato!
Also known as Gobi Aloo, it is typically made on the stovetop, but today we're making it in the air fryer. The result is the classic, delicious dish we love but with a little less effort and a whole lot of crispiness.
Ingredients-Notes & Substitutions
You can put together this Indian cauliflower and potato stir fry using simple and easily available ingredients. Let's take a look at what we need:
- Cauliflower: 1 large head of cauliflower is what we need. Follow these easy steps on how to cut cauliflower. If using pre-cut florets, you'll need roughly 4 cups.
- Potatoes: you can use gold or red potatoes in this recipe. If you're using standard-sized potatoes, cube them into evenly sized chunks. If you're using baby potatoes, you can just cut them in half.
- Onion: I use one medium sized onion cut into slices. Red, white or yellow- all work well here.
- Serrano Chilies or Jalapeños: either will work for this recipe to add a bit of heat. Be sure to cut them in half and remove the seeds.
- Avocado Oil: or olive oil. You can also use ghee, just know that it won't be vegan anymore.
- Garlic Paste and Ginger Paste: you can use store-bought versions or make your own garlic paste and ginger paste, or a combined ginger garlic paste (recommended for better, fresher flavor.)
- Roma Tomato: you'll need 2 roma tomatoes, chopped.
- Spices: We're using a blend of salt, turmeric powder, kashmiri red chili powder (or a combination of paprika and cayenne), coriander powder, roasted cumin powder (or regular cumin powder), and garam masala. If you'd like to use curry powder, add 1-1½ tablespoon instead of all these spices.
- Chopped Cilantro: used for garnish- it's the perfect way to finish this dish!

How to Make Air Fryer Aloo Gobi
Here are the step-by-step instructions for making aloo gobi in the air fryer:
- Prep the cauliflower and potatoes: Cut the cauliflower into even sized florets. Cube or slice the potato into even bite-sized pieces. Rinse and pat dry.
- Mix the veggies: Add the cauliflower and potatoes to a large mixing bowl, then add in oil, ginger and garlic paste, chopped tomatoes, and sliced onions.
- Add seasonings: Sprinkle in salt, turmeric, red chili, coriander, cumin, and garam masala. Use two spatulas to mix everything well until the cauliflower and potatoes are evenly coated.
- Air fry: Spread the mixture into the air fryer basket in a single layer and air fry at 380ºF for 10 minutes, shaking the basket after 8. After 10 minutes, pull it out, check and adjust the seasonings if necessary, then air fry for another 2-3 minutes.
- Serve: Remove the cooked aloo gobi and serve topped with chopped cilantro for garnish.
Alternate Method: Oven-Roasted Aloo Gobi or Instant Pot Aloo Gobi
If you don't have an air fryer, you can easily make aloo gobi in the oven instead:
- Prep the veggies and mix them with seasonings, as directed.
- Spread the seasoned veggies onto a lined baking sheet and cook in the oven at 425ºF for 20-25 minutes or until the edges are crisped to your liking.

Air Fryer Aloo Gobi (Indian Cauliflower and Potatoes)

- 1 large cauliflower head cut into florets
- 2 medium gold potatoes (or red potatoes) cubed
- 1 medium onion sliced
- 2 serrano chilies or jalapeños halved, seeds removed
- 2 tablespoons avocado oil or olive oil

Air Fryer Aloo Gobi
- Cut cauliflower head into even size florets. You can follow these easy steps on how to cut a cauliflower. Similarly, cube or slice potato into even bite size pieces. Rinse and pat dry. It's ok to leave a little moisture in as that helps the veggies cook without drying.
- Add cauliflower florets and potato cubes in a large mixing bowl. Add oil, ginger and garlic paste, chopped tomatoes and sliced onions.
- Add salt, turmeric, red chili, coriander, cumin and garam masala. Using two spatulas mix everything well until the cauliflower florets and potato cubes get evenly coated.
- Spread this mix into the fryer basket in a single layer. Depending on the size of your basket, you may have to air fry in multiple batches.
- Air fry at 380°F for 10 minutes, shaking the basket after 8 minutes. Pull it out, toss the aloo gobi well. Check and adjust seasoning and insert it back to air fry again for another 2-3 minutes, until the cauliflower and potatoes are tender on the inside and crisp from the outside.
- Remove the cooked aloo gobi in a serving bowl and garnish with chopped cilantro. Serve warm as a side dish.
Alternate Method: Oven Roasted Aloo Gobi
- Preheat the oven to 425°F. Follow steps 1-3 above. Spread the seasoned veggies on to a lined baking sheet. Cook for 20-25 minutes, until the cauliflower and potatoes are cooked through and crisp on the edges.
